classic brownies

we haven't had any good posts in such a long time!  there hasn't been any shortage of cooking and baking, just a shortage of extra time.  these brownies are from America's Test Kitchen and they are my new favorite recipe.  i love America's Test Kitchen recipes!  and i love their detailed cookbooks.  this recipe was tried and tried again in their test kitchens until they came up with the very best version.  and i loved it.  i didn't have enough unsweetened chocolate, so i actually decreased the amount and used what i had.  they were perfect.  not too cakey, not too fudgey, and just the right amount of melt-in-your-mouth-i-ness.   classic brownies (adapted slightly from America's Test Kitchen) 1 1/4 cups plain cake flour 1/2 teaspoon salt 3/4 teaspoon baking powder 4 ounces unsweetened chocolate, chopped (I used a bar of ghirardelli unsweetened chocolate - use GOOD chocolate!) 12 tablespoons (1 1/2 sticks) butter, cut into pieces...

no-bake peanut butter cereal treats

this is a recipe that i've actually made a hundred times but when i saw it posted on pinterest i just had to make it again.  and i'm glad that i looked at this one because it's a little different from my usual cereal/peanut butter/corn syrup treat.  just for the record, i absolutely love corn syrup and peanut butter.  i love these for snacks and desserts and the mr. can whip these up in such a hurry that it's actually dangerous.  so dangerous, in fact, that i've had to stop buying certain types of cereal for fear that he or i will make them and then i will have to, by law, eat the whole entire batch.  last time i made them i put two or three in my kids' school lunch bags just to save me from the pressure of having them sitting in the kitchen staring at me and willing me by force to eat them.  they're powerful creatures.  make 'em.   source: pinterest pinner, originally from suzie . 1 cup sugar 1 cup corn syrup 1/4 tsp. salt 1 t. vanilla ...

crock pot creamy southwest chicken

this recipe comes straight from pinterest.  i've tried to find the exact source and i think it was originally pinned from a pinner named mandy baughn - so she's gonna get the credit.  thanks, mandy - whoever you are!  she has it pinned as being a soup, but i think it is as versatile as you can possibly imagine.  i have made this recipe twice now and the second time i made a few slight adjustments and i absolutely loved it.  i think the improved recipe is so good that you can use it for whatever you can think up.  for instance, i've added milk to it at the end and eaten it as soup.  i have used it just as is and poured the creamy mixture over rice.  i've used the leftovers wrapped up in a tortilla with cheese and avocado.  i even had some large fritos and used them to dip right into the yummy mixture.  make it however you want, it's creamy and slightly spicy and entirely delicious. 1 can S&W mexican stewed tomatoes 1 can corn ...

mom's pecan-cinnamon ring

if you want something that will get your kids up in the morning, bake these pullaparts!  they smell fantastic and they're covered in ooey gooey sticky nutty caramel.  it's a traditional family recipe that my mom would make for every holiday (like easter!) or church general conference morning.  they're easy because you can make them the night before and bake them the next morning.  i'm not claiming any health benefit by eating them, though, just pure joy from rib-stickin', finger-lickin' goodness. mom's pecan-cinnamon ring 1/2 to 1 cup chopped pecans 18 frozen dinner rolls (Rhodes) 1 (3oz) package butterscotch pudding (not instant) 1/2 cup butter 3/4 cup brown sugar 3/4 tsp cinnamon grease the bottom and sides of a bundt pan.  sprinkle nuts evenly in bottom of pan.  place frozen rolls on the nuts and sprinkle the dry pudding on top.  melt the butter and combine it with the brown sugar and cinnamon.  pour this mixture over...

green enchilada casserole

this recipe is oh so good.  ask my kids.  my 4-yr old ate 4 bowlfuls!  it's a great way to use leftover grilled chicken or a rotisserie chicken.  it tastes great leftover for lunch the next day.  it's so good topped with avocados, sour cream and a little salsa.  it's great no matter how you choose to eat it.  i like to make the green sauce in the morning or the day before and let it set for maximum flavor and it thickens a bit.  then it's quick to assemble and cook for dinner!  enjoy! green enchilada casserole green sauce (recipe below) about 15 corn tortillas 2 cups grated colby jack cheese (or more for maximum cheesy-ness!) 3 chicken breasts, grilled or a rotisserie chicken, shredded for the sauce: 1 Tbsp butter 1 sweet onion, diced 3 tomatillos, husks removed 1 cup tomatillo liquid 1 tsp better than bouillon 2 4 oz. cans diced green chiles 2 garlic cloves, minced 1/4 tsp kosher salt 1/4 tsp cumin 3 Tbsp sour cream...

honey oatmeal bread

i can now say that i am a true bread snob.  i have a bosch.  doesn't that make you a bread snob immediately?  i even skipped sacrament meeting sunday just to make some bread.  i used this recipe, using the molasses as a sweetener, and it was mighty good!  i tried out this oatmeal recipe a while back and i really love it too.  it comes from the brown eyed baker website but it only makes one loaf.  one loaf!  we blow through one loaf in a few minutes!  so i had to convert it to make two loaves and i'm actually going to double this recipe and make 4 loaves in my giant bosch!  again, i apologize for the bosch snootiness.  this bread is such a perfect bread for anything from bread and butter (yum carbs!) with dinner to a healthy veggie sandwich ( superhero sandwich , anyone?). so thanks brown eyed baker for a delicious new oatmeal bread recipe.  and brown eyes?  awesome! makes 2 9x5 size loaves: 1 1/2 cups boiling ...

easy creamy lasagna

this is such a simple recipe...it's almost too simple to taste this good!  sure, there are ways of making a much more gourmet lasagna by slow cooking your sauce and perfecting the spices.  and then you could always make a bechamel sauce to add some gourmet creaminess.  i've done it that way several times, but i always go back to this easy version because, well, it's just so easy.  i can make it for a neighbor at the last minute when they're in need of a meal.  i can grab the ingredients at 4 and have a delicious meal prepared for dinner that same night.  it's just too convenient to really do any other way anymore.  and, in case you haven't noticed, i've been crazy busy.  like a chicken-with-its-head-cut-off busy.  so i need some quick meals in my arsenal to reassure my family that i have not completely forgotten about our meal time in an effort to conquer the mothering world.  *1 package no cook lasagna noodles 1 jar of good quali...
