fage

if you haven't tried fage (pronounced fa-yeh) yet, let me be the first to tell you how wonderful it is.  it is greek strained yogurt.  i like to describe it as more like a european-style, dry, unsweetened yogurt.  it's high in protein, full of good probiotics and if you can find the 0% kind, it's fat free...not to mention that it's unbelievably creamy and delicious.  i use fage in many of the curry dishes that i make to tone down the spiciness or in any dish that needs a little creaminess, without adding cream.  another favorite way to eat it is in a fruit parfait for breakfast.  it's so filling, full of flavor, healthy, light and quick.  what more could you ask for in a breakfast dish? fage honey granola favorite fruit add as much fage to your bowl as you will eat.  drizzle honey (about 2 Tbsp/1 cup, but you can always add more if you want it sweeter) over the fage and stir.  top with granola and your favorite fruit (my fa...

healthy kicked up sloppy joes

i first got the idea for this dish from everyday food and i have been using my version for a long time. although, i'll be completely honest (come on, would i ever lie to you?), my version changes a lot. each time i make them i dump in a little of this or a little of that. that's what i love about this recipe...it's so versatile. and it's a great way to use leftover vegetables or the ones getting smushy in your fridge. i always use ground turkey because, well, i am just not a ground beef kinda gal (do you hate the word gal? cuz i kinda do, but i used it anyway). i never use ground beef except for the occasional hamburger and i usually try to fool the mr. by using ground turkey instead and until recently he had no idea. if you like ground beef then you could easily use it instead of ground turkey! cut up all your veggies about the same size and they blend right into the meat and your kids will never even see them! i think i got pretty lucky, though, because my ...

chicken lime fajitas

these fajitas were a hit at our super bowl party! the chicken is marinated to sweet perfection and then grilled indoor over a very hot grill pan. with the addition of grilled peppers and onions and all the toppings, these make a delicious and easy dinner for any night of the week. lime marinated chicken 6 - 8 chicken tenders (could also use breasts) 1/4 cup sugar 1/2 cup water 1 T chili powder 1 T cumin juice and pulp of one lime a few pinches of salt add all ingredients to resealable plastic bag, or tupperware container. shake to coat all chicken. marinate for several hours, preferably overnight. preheat grill pan over medium to high heat. drizzle pan with olive oil. place chicken in hot pan! here's the part that makes it delicious...allow the chicken to remain in one spot, do not flip or move until the chicken looks cooked at least halfway through.
