crepes






i originally got this recipe from my good friend, shannon, who had us over for dinner one night and served these amazing crepes with all the gourmet toppings,and even some cream cheese filled blintzes! i've made several other recipes for crepes, but i think this one is for sure my favorite. i serve these for dinner often, and my kids get all sorts of excited about them. even still...even during these angsty teen years when mostly they give eye rolls and storm out of the room. making these crepes is sure to bring them all to the table. there's for sure an eye roll in there somewhere, but they come. and we eat and chat and the whole day gets better. and boy do we ever eat. these go fast, so make them as an entire batch and keep them warm. i like to keep a plate nearby and drop the cooked crepes on the plate and then quickly cover the whole plate with a lid to keep the heat in. then when they're all ready we sit and slather them with homemade jam, nutella, fruit, applesauce, or any other gourmet ingredients we can come up with. sprinkle with powdered sugar and enjoy!
this recipe makes enough for a crowd (but my family of 5 can easily devour them all), so cut it in half if you're cooking for a small family. 

4 c milk
2 1/3 c flour
6 eggs
2 1/2 tablespoon sugar
2 t vanilla
1/4 c butter, melted
1 tsp salt, heaping

mix together milk and eggs and beat well, then add all other ingredients and whisk until it is mostly a smooth batter. remember this batter is very runny. it's okay if some small lumps remain. pour over hot crepe pan (any saute pan will work, don't go out and buy a crepe pan, and it's a lot easier if it's non stick). cook quickly on one side, just until batter no longer looks wet, then flip and cook quickly on the other side. you don't want these to brown much, they really just cook through and voila! enjoy!

Lime Sugar Cookies (from America's Test Kitchen)

Once again, no picture yet. I'll post one when I get a chance. This is a great alternative to just the ordinary sugar cookie with frosting. I made the whole batch and froze half of it for later. The cookies taste great just out of the freezer! (makes about 2 dozen cookies) 2 cups sugar 1 teaspoon grated lime zest 2 1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1 3/4 sticks unsalted butter, softened 2 teaspoons vanilla extract 2 large eggs 2 (additional) teaspoons grated lime zest Place oven rack in the middle and heat oven to 350 F. Process 1/2 cup of sugar with 1 teaspoon grated lime zest until fragrant, about 10 seconds. Put this on a shallow dish for coating and set aside. sunday slow cooker: red beans and rice

in honor of mardi gras this year i made red beans and rice from scratch.  i am grateful to say that 6 years of my life took place in new orleans, la.  well, actually it was 5 years and 1 month + 11 months while we were displaced because of hurricane katrina, but we won't talk about that.  and during those 11 months in utah my heart was still in new orleans.  in case you're not familiar with new orleans, their claim to fame is FOOD.  and no ordinary food will do, no no no.  it must be GREAT FOOD.  and believe me, we had GREAT FOOD while we lived there.  and lots of it.   one of our favorite dishes was red beans and rice.  now that we don't live in new orleans, it's not as convenient to just run to the store and buy a can of already prepared Blue Runner beans.  so, i decided to come up with a recipe all on my own that used the slow cooker (it was sunday dinner and now with 1 o'clock church i'm using my slow cooke...
