peanut butter crinkles





















this peanut butter cookie recipe is a staple.  i was raised on this cookie.  okay, not really, but almost.  my mom made these cookies frequently.  somehow they ended up becoming a "christmas cookie" in our family, but they really are much more than that.  in fact, they're so much more than that, that i don't make them for christmas.  i make them all year.  they're that good.  i didn't even like them as a child.  i guess my mom made them so often that i didn't realize just how good they were.  and now i'm an adult and i can't get enough of them.  
 
they're supposed to be made with a hershey kiss placed in the center, but since i rarely have hershey kisses, i opt for 2-3 large milk chocolate chips.  or i completely remove the chocolate all together.  don't be a hater.  i like chocolate.  i promise.  i really only like it in little bits, though.  and sometimes sweets that are good enough, don't need any chocolate at all.  sometimes.  and sometimes they do.  that's why sometimes i put the chocolate on and sometimes i don't.  you get the point.  try them with or without chocolate and decide for yourself.  sometimes i even bring them to a whole new level and make ice cream sandwiches with them.  that will make for some happy kids this summer break!



peanut butter crinkles

1 cup butter
1 cup peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
sugar, for rolling
chocolate kisses or chips (optional)

in bowl with mixer at medium speed, beat first 6 ingredients until fluffy.  at low speed beat in next 4 ingredients.  shape into 1" balls; roll in sugar.  place 2" apart on ungreased cookie sheets.  bake in a 350 degree oven 10 minutes or until lightly browned around the bottom.  Don't overcook!  immediately press chocolate kiss or chips into the top of cookie, if using.  cool and store in airtight container.  makes 6 dozen.

    1. ice cream! i usually just do chocolate chips on top, but it's been so warm here that i decided to make them into ice cream sandwiches.

  2. So did you know we make these all the time? Just made them again tonight. The first time we made them was last summer and we did vanilla ice cream in the middle just like your picture. Gosh, those were good! You hooked us!

sunday slow cooker: red beans and rice

Marinara with butter and onion

did I tell you that I love butter? well, I do. (see here ) so when i came across this recipe on the smitten kitchen , i was in awe. although wisdom tells you that a good marinara sauce comes from hours of simmering vine ripened tomatoes in delicious spices and mouth watering aromatics, this recipe sort of defies that wisdom. it's three ingredients...that's it. while the quality of the tomatoes does add value to this sauce, it's also ok to substitute with the can of tomatoes you've got on hand. if that's san marzano tomatoes, it's going to be delicious, if it's just a can of hunts, it will still be fantastic (i don't recommend a store brand of tomatoes for this recipe, however). for me, it's the go to recipe when i'm swamped and cannot find time to spend in the kitchen. let me tell you something about myself. i'm a people pleaser. so i have a hard time saying no. rotisserie chicken noodle soup

i can't even begin to tell you how much i wish that this were not a post about soup.  i wish i could have a talking with mother nature and convince her that spring is necessary.  not only for the budding tulips and daffodils, but for my mental status.  i dislike winter.  there.  i said it.  this year i even tried my best to not let winter get to me.  i invested in insulated running tights and lots of warm gear to get me through all the snow storms.  and i ran through lots of cold dreary days.  and it helped.  oh boy, did it help!  but dog-gone-it, it's may now.  i tried to have patience through the blustery march weather.  i was optimistic when april's sunshine peeked through the clouds.  but, honestly, that was maybe once.  and now i'm telling you what...my patience has worn thin and i'm anxious to get my cold weather gear put away.  i want to hop on my bike and pedal my way into mental heaven.  but ...
