almond macadamia granola

lately i've been experimenting with lots of different granola recipes.  some are too greasy, some are too dry.  some add oil and others use butter.  some recipes use ingredients that are nearly impossible to find.  each time i try a new recipe, though, the granola gets devoured.  needless to say, my people love granola.  and since earlier in the week i was able to snag some delicious greek yogurt at a fantastic price (couponing!) i figured it was time for a new batch.  but this time was different.  i didn't use a recipe, i just wanted something basic.  i threw it all together and it is probably my new favorite.  and the mr. would definitely agree.  it's the first thing he goes to in the morning and the first snack he grabs on his way in the door from work.  and i mean, for heaven's sake, is there any food which includes macadamia nuts that is not absolutely mouthwatering?  my vote is no.

3 cups rolled oats
3 cups quick cooking oats
1 cup macadamia nuts chopped
1 cup sliced almonds
3/4 cup wheat germ

add all ingredients to large bowl and mix well.  to a medium size bowl, stir together:

1 cup oil
1 cup honey
2 T vanilla
2 t. salt

heat in microwave for 30 seconds just to soften the honey so it incorporates a little better into the oil, it doesn't need to be fully blended together.  pour mixture over oat mixture and toss to coat.  pour granola onto a large rimmed baking sheet and place in 375 degree oven for 30-35 minutes.  watch granola carefully, you want it to be a nice rich golden brown, but don't let it burn.  about half way through the baking time, remove from oven and stir the granola so it bakes evenly.  allow granola to completely cool and then use it for all sorts of yumminess.  how about this?

sunday slow cooker: red beans and rice

in honor of mardi gras this year i made red beans and rice from scratch.  i am grateful to say that 6 years of my life took place in new orleans, la.  well, actually it was 5 years and 1 month + 11 months while we were displaced because of hurricane katrina, but we won't talk about that.  and during those 11 months in utah my heart was still in new orleans.  in case you're not familiar with new orleans, their claim to fame is FOOD.  and no ordinary food will do, no no no.  it must be GREAT FOOD.  and believe me, we had GREAT FOOD while we lived there.  and lots of it.   one of our favorite dishes was red beans and rice.  now that we don't live in new orleans, it's not as convenient to just run to the store and buy a can of already prepared Blue Runner beans.  so, i decided to come up with a recipe all on my own that used the slow cooker (it was sunday dinner and now with 1 o'clock church i'm using my slow cooke...

hash brown quiche

sorry i've been m.i.a. for a while.  i haven't really been m.i.a.  i just moved across the country in the middle of the first trimester of my third pregnancy and i've been a little wonky the past few months.  (ask my husband)  while in the throngs of packing up our house full of junk, er... things, i just couldn't keep up with all my responsibilities, so the blog had to go...temporarily.  plus, i mean really, along with all the yucks of those first few months like feeling like your stomach is turning inside out and you can barely keep control of your balance and you don't even want to think about food, i had a strange aversion to all things cyberspace.  even the thought of facebook or checking my email or this blog sent me into a spin of nausea.  strange, i know.  i can't really explain it.  i do have a friend who said when she was pregnant she had a strange aversion to certain people.  anytime she saw someone in particu...

Lime Sugar Cookies (from America's Test Kitchen)

Once again, no picture yet. I'll post one when I get a chance. This is a great alternative to just the ordinary sugar cookie with frosting. I made the whole batch and froze half of it for later. The cookies taste great just out of the freezer! (makes about 2 dozen cookies) 2 cups sugar 1 teaspoon grated lime zest 2 1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1 3/4 sticks unsalted butter, softened 2 teaspoons vanilla extract 2 large eggs 2 (additional) teaspoons grated lime zest Place oven rack in the middle and heat oven to 350 F. Process 1/2 cup of sugar with 1 teaspoon grated lime zest until fragrant, about 10 seconds. Put this on a shallow dish for coating and set aside. In a separate bowl, whisk flour, baking powder, and salt together. Set aside. Beat butter and remaining 1 1/2 cups sugar together in a large bowl using an electric mixer on medium until light and fluffy, 3-6 minutes. Beat in vanilla and, then, the eggs and lime zest. Add eggs on...
