magic cookie bars

this is a recipe that comes from our dear, sweet, loving mom. (did i get extra points, mom?) growing up, she always made the best food, be it baking or cooking! she's the one who really taught us how to be creative in the kitchen. and she learned from her mom, who was a perfectionist when it came to recipe creations! so you could say that our love of good food comes naturally. this recipe is so simple yet so delicious. the last time i made it, however, i decided to experiment a little with some extra flavors. the result was delicious...and i dare say there is a little extra magic in these magic cookie bars! ;)

for the graham cracker crust:

1 1/2 inner packages graham crackers, crumbled
1 1/4 cubes butter, melted
pour butter into 9x13 inch pan. add graham crackers and blend with fork. use fork to press into crust along the bottom and partially up the sides of the pan.

Sprinkle with:
1 cup milk chocolate chips (you could use semi sweet, but i'm a milk kind of girl)
1 cup butterscotch chips
1 cup white chocolate chips
1 cup pecans
1 1/2 cups coconut

pour over 1 can sweetened condensed milk evenly over top
drizzle over the top with 1/2 jar of good quality caramel ice cream topping

bake at 350 degrees for 30 - 35 minutes or until rich and golden brown along all the edges and the center is bubbling. (make sure they're done! you want the evaporated milk to really cook and get caramelized!)

heart cookies

got this recipe from martha for valentine's day.  it is a mix between an oatmeal cookie and a shortbread cookie and oh so yummy.  i'll be taking these to a preschool party and around to some of my friends tomorrow.  they are reminiscent of graham crackers and chocolate frosting, which my husband and kids love, so i'm hoping they enjoy these.  the dough turned out be a bit different than the recipe claims, but i made it work.  i've changed the recipe only slightly-i dipped the hearts in melted chocolate chips rather than sandwiching nutella between two cookies.   one great tip on melting chocolate is do it in the microwave!  it's so easy and you don't have to worry about a double-boiler and all that clean up.  ina garten, the barefoot contessa and one of my cooking idols, gives a great explanation on how to do it here .  i'm sure the nutella way would be good, too.  it's just not something i regularly have in my pantry, for good reason.

pear salad with lemon-garlic vinaigrette

i have a friend who served me this salad.  it was love at first taste.  i think i could spend the rest of my life with that dressing.  i found myself wanting to eat it so often, i had to find something else to pair it with (just plain drinking it was not an option, although, it did cross my mind.)  it actually happened by accident.  i added pears to my salad one day and loved it so much, the next day i decided to leave out the lettuce/spinach altogether.  the result:  a fantastic and easy salad that just may make your lips pucker up and make your heart skip a beat. 2 fresh pears, peel on and diced grated parmesan, or any other sharp cheese almonds, chopped or slivered (the original recipe calls for crumbled bacon, which would be fantastic even in this salad!) lemon-garlic vinaigrette juice of one lemon small clove of garlic, minced 2/3 cup canola oil salt and pepper to taste combine in a jar and shake to emulsify (or you can whisk in the canola oil to emulsify.

a little spicy, a little sweet, a little nutty, a little coconutty, a lot good

this one is a definite do-try recipe.  i got it from my friend, jen, who has a fabulous cooking blog of her own.  i've changed her recipe around just a smidgen to fit my tastes.  if you love thai food (which i do), if you love spicy, sweet, nuts, coconuts, than you will love this.  it's nice to find a massaman that compares to my favorite at bangkok grill in orem, ut.  move over cafe rio--when i visit utah, i visit bangkok grill (and el azteca for their to.die.for tamales).  but now i can make it from the comforts of my kansas city home.  thanks, jen.  (she also has a tamale recipe on her blog which i MUST try.  who knows--maybe i won't need el azteca any more!) Massaman Curry  1/4 onion, cut into pieces 1/2 lb chicken breast, sliced thinly  (i used about 5 chicken tenders.) 3 Tbsp unsalted cashews 8 small yukon gold potatoes, peeled, scored and cut into chunks (scoring is the best word to describe it--drag a fork down the length of it.  it's the way bangkok grill
